California Kadhi

Ingredients:

Vegetable Kadhi Ingredients
  • Soycutash, frozen 1 lb. bag
  • Spinach, frozen 8 oz.
  • Salt 1 tsp
 
  • Buttermilk 1 quart
  • Besan flour ¼ cup
  • Ginger, grated 1 inch
  • Coriander powder 1 tsp
 
  • Cumin seed ½ tsp
  • Mustard seed ½ tsp
  • Asafetida pinch
  • Curry leaves 1 sprig
  • Red chili powder ¼ tsp
  • Turmeric ¼ tsp
  • Sugar (optional) 1 tsp

Directions:

  1. In a steamer, add the frozen veggies, sprinkle with salt and steam until done. About 10 min.
  2. In a blender, mix the buttermilk, besan flour, ginger and coriander. Set aside
  3. In a 4 qt small Dutch oven or sauce pan, heat 1 Tbsp oil to a medium heat (4). When hot (but not smoking), add the cumin and mustard seeds. They will crack in a few seconds. Add a pinch of asafetida ( hing) and the curry leaves. Sauté for a minute.
  4. Carefully pour the buttermilk mixture into the spiced oil. Reduce the heat to medium low (3) and simmer for about 10 minutes. Add in the red chili powder and turmeric. This mixture requires constant stirring or it will scorch. It will thicken as it cooks.
  5. Add in the veggies and cook a few more minutes. Add some water, if needed, to get the right consistency.

Notes:
Serve over basmati rice.

There is Gujarati Kadhi, Punjabi Kadhi, Rajasthani Kadhi, Sindhi Kadhi and now I'm introducing California Kadhi! Kadhi is basically a spiced buttermilk (or a yogurt and water mixture; 2 cup/3 cup) broth thickened with besan (garbanzo bean) flour. Buttermilk is used here since it is commonly available in the U.S. Some recipes are just broth, others add some goodies; usually, pakoras. The idea for this recipe was to make a healthy one dish meal by adding veggies instead of pakoras. You can use whatever veggies you prefer; okra, potato, carrot and green beans are popular choices. Here I selected edamame for protein and spinach for some greens. If Soycutash from Trader Joe's is not available, just use 8 oz. frozen edamame and 8 oz frozen corn. This is a really tasty meal that adds variety to the regular menu. Enjoy!
