Veggie Turkey Sandwich |

Ingredients:
• Whole grain bread | 2 slices | |
• Mayonnaise | 1 Tbsp | |
• Veggie turkey | 2 - 3 slices | |
• Roasted bell pepper | as needed | |
• Lettuce | 2 leaves | |

Directions:
- Wash the lettuce leaves. Pat dry the leaves with a cloth or paper towel.
- Take red bell pepper pieces as needed from the jar and place on a paper towel. Pat dry.
- Spread some mayonnaise on each slice of bread. Optionally, apply some mustard on one slice.
- Build the sandwich. Add slices of veggie turkey, a layer of roasted pepper and lettuce leaves.
- If serving at home, slice it in half. Otherwise, if packing it to go, leave it whole in the sandwich bag. It makes for easier eating later.
Notes:
Serve with coleslaw, potato salad, sweet potato, soup or chips. Green leaf, red leaf or butter/Boston lettuce are the best for sandwiches. Iceberg lettuce has little nutritional value.
This sandwich uses slices of Worthington's "Meatless Turkey". It comes in frozen Deli slices or a frozen 4 lb roll. The roll can be thawed and sliced. Store stacks of about 8 slices each in ziploc bags then refreeze. Keep only what can be used in a week thawed in the refrigerator. It goes great in sandwiches and I find the texture better than other companies that offer veggie meat deli slices (Tofurky, Yves, Lightlife etc.).
