Tortellini & Sausage |

Ingredients:
• Tortellini, pesto | 16 oz. pkg | |
• Olive oil | 2 Tbsp | |
• Garlic | 2 cloves | |
• Bell Pepper mix | 8 oz., approx 2 cups | |
• Italian Herb seasoning | 1 tsp | |
• Peas, frozen | 8 oz., approx 1½ cups | |
• Tofurky Italian sausage | 2 links | |
• Water | 1/2 cup | |
• Marinara sauce | 2 cups | |
• Mozzarella, shredded | 1 cup | |

Directions:
- Cook the tortellini. In a Dutch Oven, bring 3 quarts of water and 1 Tbsp salt to a boil. Add in the tortellini. Reduce to a simmer (5) and boil uncovered for 17 minutes. Save 1/2 cup water for later. Drain in a colander. Do not rinse. Return to the Dutch Oven and set aside.
- In a large frying pan, sauté the garlic in olive oil for a minute or so at medium lo heat (3).
- Add in the frozen bell pepper and Italian seasoning. When half cooked..
- Add in peas, sausage and water. When tender..
- Add in the marinara sauce. Let everything simmer until cooked through.
- Pour the veges, sauce and mozzarella over the tortellini. Using a large spoon, stir and combine. Be careful not to break up the tortellini.
Notes:
Italian Herb is a mixture of oregano, basil, thyme and a few other spices. If you don't have Italian seasoning handy, you can substitute just basil. The frozen bell pepper mix has red, yellow and green bell peppers. If this is unavailable, a 1 lb. bag of frozen peas and carrots could be used instead of the bell pepper and peas. If the Tofurky Italian Sausage is not available, a 14 oz. block of tofu can be substituted. Simply cut into 1/2" cubes, sauté and add a little soy sauce at the end.
Grated parmesan can be sprinkled on top when served.
Can be served with a salad and roll/bread.
