Vegetable Stew |

Ingredients:

• Tomato paste | 1 Tbsp | |
• WW Pastry Flour | 2 Tbsp | |
• Potato, red unpeeled | 3 medium | |
• Carrot | 2 medium | |
• Peas, frozen | 1 cup | |
• Parsnips | 2 medium | |
• Swiss Chard | 3 large leaves | |
• Chicken-less Strips (Trader Joe's) |

Directions:
- In a large Dutch oven, heat up 2 Tbsp of oil (4), add in the mushrooms and ¼ tsp salt. Sauté briefly then cover and let cook about 5 minutes. A lot of water will come out.
- Remove the cover and let some of the water to boil off. Add in another Tbsp of oil, the onion, bay leaf and seasoning. Cook until onions are translucent. If using garlic cloves, add them in as the onions are finishing otherwise if using a frozen Dorot garlic cube, add it in the next step with the water.
- Add in the water, vegetable broth, tomato paste and remaining vegetables, except for the peas and Swiss chard. Add in the remaining ¾ tsp salt and the pepper. Bring to a boil then turn down to a simmer (3).
- Mix the flour with ¼ cup of water and stir into the boiling stew. The broth will thicken in a few minutes.
- Cook for about 30 min. About 10 min before done, add in peas, Swiss chard and chicken-less strips.
- At the end, add a squeeze of lemon.
- Taste to make final salt adjustment.
Notes:
Serve with Artisan bread or Cornbread.
Many different vegetables can be used in a stew. Celery, red bell pepper and zucchini are other options that can be included. In place of the Swiss chard, 8 oz. of spinach or kale can be used.
If the Trader Joe's "Chicken-Less" is unavailable, there are other options below. Gardein and Tofurky are preferred. They are gluten based and have a more chewy texture. Beyond Meat is a gluten free choice. It is made from soy, peas and rice.
