Ravioli |

Ingredients:
• Ravioli | 10 oz. 14 pieces |

• Marinara sauce | as needed | |
• Parmesan, grated | to taste | |
• Vegetables | 2 servings | |
• Artisan bread |
Directions:
This is a simple and quick meal and no recipe is really needed.
- Bring 3 quarts of water and 1 tsp of salt to a boil.
- Add in the raviolis and reduce the heat to a low boil (5). Follow the boiling times on the package.
- When done, remove with a slotted spoon or drain in a colander.
- Steam or sauté any veggies of your choice.
- Heat the sauce. The simplest way is to pour some into a small dish, cover with a paper towel and microwave it.
Notes:
Serve with a side of green veggies and garlic or artisan bread. In the photo below, asparagus was sautéed in some olive oil with garlic.
Ravioli comes either fresh in the refrigerated section of the store or frozen. There are generally two sizes; small squares about 1.5" and large squares 2" or more. I like the larger ravioli since they hold more filling and the pasta tends to be more tender. Keeping some on hand in the freezer, is convenient if you have to make a meal in a hurry. VONS carries frozen, Safeway SELECT, and fresh RANA, Buitoni (small squares). Costco carries large bags of frozen. Sprouts has fresh, O Sole Mio, and frozen, Rising Moon Organics (small squares). Trader Joes has fresh, several types (Four Cheese Jumbo below was excellent) and frozen, several types.
