Creamy Polenta |

• Water | 4 cups | |
• Salt | 1/2 tsp | |
• Cornmeal, yellow | 1 cup | |
• Butter | 1 Tbsp | |
• Parmesan, grated | 1/2 cup | |

Directions:
- Bring water and salt to a boil.
- While whisking constantly, gradually pour in the cornmeal. This needs to be done very gradually to prevent lumps from forming. Another method is to keep 1 cup of water aside cold, mix with cornmeal then pour the slurry into the boiling 3 cups of water.
- Reduce the heat to Lo and simmer for 10-15 minutes. Give a vigorous stir every few minutes.
- When done, mix in the butter and cheese.
Notes:
This can be served with ratatouille or Italian-style vegetables.
