Creamy Polenta

  • Water 4 cups
  • Salt 1/2 tsp
  • Cornmeal, yellow 1 cup
  • Butter 1 Tbsp
  • Parmesan, grated 1/2 cup

Directions:

  1. Bring water and salt to a boil.
  2. While whisking constantly, gradually pour in the cornmeal. This needs to be done very gradually to prevent lumps from forming. Another method is to keep 1 cup of water aside cold, mix with cornmeal then pour the slurry into the boiling 3 cups of water.
  3. Reduce the heat to Lo and simmer for 10-15 minutes. Give a vigorous stir every few minutes.
  4. When done, mix in the butter and cheese.

Notes:
This can be served with ratatouille or Italian-style vegetables.
