Ingredients:
• Pizza crust | 1, 11" | |
• Pizza sauce | 1/3 cup | |
• Mozzarella, shredded | 1½ cup | |
Toppings of your choice: | ||
• Mushrooms | 2 | |
• Olives, sliced | small can | |
• Onion, red | 1/4 small | |
• Tomato | 1 small | |
• Bell pepper | 1/4 sliced thin |
Directions:
- Cut the veggies. Slice the mushrooms thin, dice the tomato, onion and bell pepper.
- Pre-heat the oven to 450 degrees. Place the oven rack in the upper 1/3 position. If using a pizza stone, put the stone in the oven to pre-heat also.
- Decorate the pizza (it's art!). Put on a layer of sauce then the cheese. Add veggies on top. Optionally, you can sprinkle a little cheese on top or use Parmesan for a little extra flavor. Leave a 1" rim for easy handling.
- Bake the pizza. Slide the pizza onto the hot pizza stone. Be careful. Bake for 8-10 minutes depending on how crispy you like the crust. (Convection at 425 degrees for 6-8 min)
- When done, place the whole pizza stone on a towel on the counter. If your stone is delicate, move to a cutting board for slicing. Slice into 8th's and serve.
Notes:
Pizza is pretty concentrated so it's good to serve it with a salad to moderate the meal. Other popular veggie toppings include; spinach, zucchini, artichoke, chives. Don't overload it. Too many veggies can make it watery and hard to handle.
The Boboli crust is expensive, about $5. So, when you add in the extras, it gets to be about the same or more than the readymade frozen pizzas. The advantage of making your own is you can customize it just the way you like it and it can be a fun family project. Otherwise, if it seems like a lot of work, there are quite a few frozen vegetarian pizzas out there; Amy's, Kashi, Sprouts, Newman's Own, Trader Joe's etc.
