Ingredients:
• Corn chips | bunch | |
• Cheese, shredded | 1/4 cup | |
• Avocado | 1/2 | |
• Salsa | 1 Tbsp | |
• Sour cream, light | 1 tsp | |

Directions:
- Form a circle of chips around the outside of a plate leaving the center clear for the guacamole.
- Scoop out 1/2 an avocado into a small bowl, add 1 Tbsp of your favorite salsa then mash with a fork.
- Sprinkle a layer of shredded cheese on the chips. Place in the microwave for about 25 seconds until melted nicely.
- Put the guacamole in the center, top with sour cream and you have it!
Notes:
This is really simple and very quick. A favorite with the kids for an after-school snack. You can use Greek yogurt instead of the sour cream if desired. Sprinkle with sliced Jalapeno peppers if you like it spicy.
