Nachos

Servings:  1 or 2

Ingredients:

  • Corn chips bunch
  • Cheese, shredded 1/4 cup
  • Avocado 1/2
  • Salsa 1 Tbsp
  • Sour cream, light 1 tsp

Directions:

  1. Form a circle of chips around the outside of a plate leaving the center clear for the guacamole.
  2. Scoop out 1/2 an avocado into a small bowl, add 1 Tbsp of your favorite salsa then mash with a fork.
  3. Sprinkle a layer of shredded cheese on the chips. Place in the microwave for about 25 seconds until melted nicely.
  4. Put the guacamole in the center, top with sour cream and you have it!

Notes:
This is really simple and very quick. A favorite with the kids for an after-school snack. You can use Greek yogurt instead of the sour cream if desired. Sprinkle with sliced Jalapeno peppers if you like it spicy.
