Hot Muesli Cereal |
Muesli is a healthy and hearty cereal made from a blend of whole grains, dried fruits, nuts and seeds. The grains have been lightly steamed before they were rolled, so this cereal can be eaten cold (raw) or hot. For cold cereal, soak 1/2 cup cereal in 1 cup of yogurt, milk or fruit juice for 5-10 minutes or overnight like the Swiss do. Personally, I prefer the hot cereal using the recipe below. At serving time, some fresh fruit can simply be added on top. Blueberries, blackberries, raspberries, strawberries or sliced banana are common options.
Muesli will need some sweetening. If not added while cooking, sugar is generally added at the table. The below version is lightly sweetened so that sugar doesn't need to be added at the table.

Basic muesli:
• Muesli | 3/4 cup | |
• Water | 3/4 cup | |
• Milk | 3/4 cup | |
• Salt | 1/8 tsp | |
• Sugar | 2 tsp | |

Directions:
- Bring the water, milk, salt and sugar just to a boil using a medium heat (6).
- Reduce the heat to medium lo (3) and stir in the muesli. Cook for 5 minutes, stirring constantly.
- Let stand for 5-10 minutes to thicken before serving.
- Microwave version - Put all contents in a bowl. Microwave for 3-5 minutes, stirring once during cooking.
Notes:
I use a half water half milk mixture since milk easily boils over and scalds. Making it with just water would be too bland. The half and half mixture makes a good balance for cooking and flavor. For kids, you can use 1 cup milk, 1/2 cup water.
Serve with milk. Poured it around the edges, to help cool it and make it easier to eat.
