Mashed Potatoes & Gravy  

This is a vegetarian version of the standard meat, potato and vegetable meal typical in a Western diet.

Mashed Potato Dinner

Directions:

  1. Make the Mashed Potatoes.
  2. Steam a side of vegetables of your choice.
  3. Make the Gravy.
  4. Heat some veggie turkey or sauté tofu.

Notes:
This meal can be served with sautéed tofu or a veggie meat. The photo here shows a couple of slices of Worthington's "Meatless Smoked Turkey". It comes in a frozen 4 lb roll. It can be thawed and sliced. Store stacks of about 8 slices each in ziploc bags then refreeze. Keep only what can be used in a week thawed in the refrigerator. It goes great in sandwiches and I find the texture better than other companies that offer veggie meat deli slices (Tofurky, Yves, Lightlife etc.). Available at "Cream of the Crop" in Oceanside or "Mother's Market & Kitchen" in the LA area.

Another recommended veggie meat is Gardein's Turk'y Cutlet. This can be used to simulate a Thanksgiving Dinner. The Veggie Grill restaurant chain uses it in their holiday special.
