  • Eggs 2
  • Milk 2 Tbsp
  • Vanilla extract 1/4 tsp
  • Cinnamon 1/8 tsp
 
  • WW Bread 2 slices

Directions:

  1. Beat together the eggs, milk, vanilla and cinnamon in a shallow container that will accommodate the bread slices. A pie plate also works.
  2. Heat a non-stick 10-12" skillet or cast iron griddle to a medium-lo heat (3). Add a few drops of canola oil and wipe the surface with a paper towel.
  3. Dip the bread in the egg mixture, coating both sides quickly. You can use a fork to handle the bread. Don't let it soak in the eggs too long or it will get soggy in the middle. Put it straight onto the skillet. Two pieces will fit at a time.
  4. Flip with a spatula when the first side is done. About 2-3 minutes. If the heat is too high, it will overcook on the outside and remain uncooked on the inside. You can lightly press on the toast with the spatula to get recessed areas cooked.

Notes:
You can make two toasts and scramble the left over egg. Lightly butter. Eat them as is or with a little maple syrup on top. Serve with fresh fruit or soy sausage on the side. MorningStar, Worthington or Lightlife have vegetarian versions.

This recipe bypasses the sugar that many recipes have. It is not needed, especially if you add maple syrup at the table. Use any bread of your choice. The typical ones are challah, brioche or a white bread. However, I find a whole grain bread works just as well.
