Feta Sandwich Ingredients

Ingredients:

  • Whole wheat pita 1
  • Lettuce 2 large leaves
  • Tomato 4 slices
  • Feta cheese 1/4 cup
  • Black olives to taste
  • Salad dressing to taste

Directions:

  1. Wash the lettuce leaves and tomato. Pat dry the leaves with a cloth or paper towel. Slice the tomato.
  2. Heat the pita. Microwave for about 15 seconds. This will make it more pliable to work with.
  3. Cut the pita in half. Using a rounded dinner knife open pita pockets. Be gentle to prevent tearing the pita.
  4. In each half, add in a folded lettuce, 2 tomato slices, 2 Tbsp of feta crumbles and optionally some olives.
  5. Spread salad dressing of your choice in each half as needed.

Notes:
Serve with soup, coleslaw, chips, fries, potato salad or some leftover mashed sweet potato. Adding the ingredients into a folded lettuce leaf helps to keep the pita from getting wet. If making this sandwich to go, pack the salad dressing in a small sealable plastic container.
