Feta Sandwich |

Ingredients:
• Whole wheat pita | 1 | |
• Lettuce | 2 large leaves | |
• Tomato | 4 slices | |
• Feta cheese | 1/4 cup | |
• Black olives | to taste | |
• Salad dressing | to taste | |

Directions:
- Wash the lettuce leaves and tomato. Pat dry the leaves with a cloth or paper towel. Slice the tomato.
- Heat the pita. Microwave for about 15 seconds. This will make it more pliable to work with.
- Cut the pita in half. Using a rounded dinner knife open pita pockets. Be gentle to prevent tearing the pita.
- In each half, add in a folded lettuce, 2 tomato slices, 2 Tbsp of feta crumbles and optionally some olives.
- Spread salad dressing of your choice in each half as needed.
Notes:
Serve with soup, coleslaw, chips, fries, potato salad or some leftover mashed sweet potato. Adding the ingredients into a folded lettuce leaf helps to keep the pita from getting wet. If making this sandwich to go, pack the salad dressing in a small sealable plastic container.
