Ingredients:
• Whole wheat pita | 1 | |
• Lettuce | 2 large leaves | |
• Tomato | 4 slices | |
• Falafel balls | 4 | |
• Tahini Sauce | 2 Tbsp | |

Directions:
- Wash the lettuce leaves and tomato. Pat dry the leaves with a cloth or paper towel. Slice the tomato.
- Heat 4 frozen falafel balls in a small bowl. Microwave for about 45 seconds.
- Heat the pita. Microwave for about 15 seconds. This will make it more pliable to work with.
- Cut pita in half. Using a rounded butter knife open pita pockets. Be gentle to prevent tearing the pita.
- In each half, add in lettuce, 2 tomato slices, 2 falafel balls.
- Spread Tahini sauce in each half as needed.
Notes:
Falafel sandwiches are quick and easy when using premade falafel balls. Yves makes falafel balls which are available in the refrigerated section. Trader Joe's has frozen falafel balls which are very good. Keep the falafel balls frozen and they'll keep for a long time. Just heat up the amount you need. Serve with soup, coleslaw, chips, fries or potato salad.
Green leaf, red leaf or butter/Boston lettuce are the best for sandwiches. Iceberg lettuce has little nutritional value. A few avocado slices makes an extra treat.
If a premade tahini sauce is unavailable, a hummus spread or salad dressing ( Annie's Goddess or Cowgirl Ranch) may serve as a substitute. To make from scratch;
1/2 cup tahini (sesame seed paste)
1/2 cup plain yogurt or water
1 lemon, juiced
2 garlic cloves, chopped
Pinch salt
Pinch paprika
Combine all the ingredients in a blender, process on high speed to make a smooth and creamy sauce. Adjust seasoning, to taste.
