Caprese Sandwich |
Servings: 2 sandwiches
Ingredients:
• Artisan bread | 4 slices | |
• Pesto | as needed | |
• Tomato | 1 medium | |
• Salt & Pepper | to taste, use shakers | |
• Balsamic vinegar | a few drops | |
• Mozzarella cheese | 4, ¼" thick slices | |
• Basil leaves | 4-8 | |

Directions:
- Slice the tomato into 4, ¼" thick slices. Slice 4, ¼" thick slices from the mozzarella roll.
- Either slice off 4 slices of bread or slice off a section of the Ciabatta a little wider than a slice of tomato then slice in half horizontally to make 2 sandwich halves.
- Spread pesto sauce on the inner sides of the bread.
- Start the stack with 2 tomato slices, season with a few shakes of salt and pepper then drizzle with a little vinegar.
- Top with the cheese, a few basil leaves then the top slice of bread. Enjoy!
