Ingredients:
• Whole grain bread | 2 slices | |
• Mayonnaise | 1 Tbsp | |
• Artichoke hearts | as needed | |
• Swiss cheese | 1-2 slices | |
• Roasted bell pepper | as needed | |
• Lettuce | 2 leaves | |

Directions:
- Wash the lettuce leaves. Pat dry the leaves with a cloth or paper towel.
- Take marinated artichoke pieces as needed from the jar and place on a paper towel. Pat dry.
- Take red bell pepper pieces as needed from the jar and place on a paper towel. Pat dry.
- Spread some mayonnaise on each slice of bread. Optionally, apply some mustard on one slice.
- Build the sandwich. Start with a lettuce leaf as a water barrier, add a layer of artichokes, a slice of cheese, a layer of roasted red pepper and finally, top off with another lettuce leaf for a moisture barrier on the top side..
- If serving at home, slice it in half. Otherwise, if packing it to go, leave it whole in the sandwich bag. It makes for easier eating later.
Notes:
Serve with coleslaw, potato salad, sweet potato, soup or chips. Green leaf, red leaf or butter/Boston lettuce are the best for sandwiches. Iceberg lettuce has little nutritional value.
