Veggie artichoke Sandwich Ingredients

Ingredients:

  • Whole grain bread 2 slices
  • Mayonnaise 1 Tbsp
  • Artichoke hearts as needed
  • Swiss cheese 1-2 slices
  • Roasted bell pepper as needed
  • Lettuce 2 leaves

Directions:

  1. Wash the lettuce leaves. Pat dry the leaves with a cloth or paper towel.
  2. Take marinated artichoke pieces as needed from the jar and place on a paper towel. Pat dry.
  3. Take red bell pepper pieces as needed from the jar and place on a paper towel. Pat dry.
  4. Spread some mayonnaise on each slice of bread. Optionally, apply some mustard on one slice.
  5. Build the sandwich. Start with a lettuce leaf as a water barrier, add a layer of artichokes, a slice of cheese, a layer of roasted red pepper and finally, top off with another lettuce leaf for a moisture barrier on the top side..
  6. If serving at home, slice it in half. Otherwise, if packing it to go, leave it whole in the sandwich bag. It makes for easier eating later.

Notes:
Serve with coleslaw, potato salad, sweet potato, soup or chips. Green leaf, red leaf or butter/Boston lettuce are the best for sandwiches. Iceberg lettuce has little nutritional value.
